The client is a small independent and growing company of fantastic Gastro Pubs situated across the South of England. This particular Pub is a new addition to the collection that is offering not only fresh food but as its situated on a Country Estate.

They have just had a refurbishment which includes considerable investment on the new state of the art kitchen with induction, combination oven, and a fantastic layout with the capacity to operate up to 200 covers at a time with further opportunities to cater for large functions. Game being key to the estate there will be shoot lunches, elevenses and full shoot party dinners right through the season.

The role & package

We are looking for a Sous Chef to join and help lead the brigade and work closely with an award winning Head Chef. Ideal candidates will have bags of drive and energy, work well under pressure and will have the ability to contribute to menu writing with a passion for good quality food.

* A salary of up to 27K per annum depending on experience

The Ideal Candidate

Our client is a collection of Iconic Pubs, mostly in the beautiful British countryside. Each pub has been lovingly refurbished to an extremely high and attractive standard. All but 2 of our properties have bedrooms, many have additional private dining areas and most of them have been awarded 1 or 2 rosettes.

This establishment recently reopened after a full refurbishment the new look remains the hub of the community and offers a seasonally focused menu using the very best ingredients sourced from the local Estate and farmland, alongside real ales, fine wines including access to a private cellar and cigars. The Pub has 90 covers spread across the dining areas and public bar with an additional 100+ covers in the idyllic outside space with breath taking views. An eight bedroom lodge will open before Easter with its own private dining room, gun and boot room and courtyard giving 11 excellent letting rooms in total.

The Deal & Package:

As the Landlord of the business you will have a significant amount of autonomy with the added support of a forward thinking company. In return an excellent basic salary is offered alongside a great bonus scheme and the potential for a three bedroom property on the beautiful estate. The ideal candidate will:

* Be a bar raiser who will go above and beyond to make their guests happy
* Have experience of being accountable for P & L’s and is able to hit and exceed financial targets
* Have great knowledge of wines & their origins, what wine is a good compliment to what food is served.
